| Tofu in Salted Soy Bean Paste |

Ingredients 3 squares Pureland Firm Tofu 2 cloves garlic 3 red fresh chillies 2 teaspoons salted soya bean paste 2 tablespoons peanut oil 1/4 cup water 1 tablespoon light soy sauce salt to taste 2 tablespoons chopped celery leaves 2 tablespoons chopped spring onions (scallions) Method Dice tofu, grate garlic finely, then seed and shred chillies. Mash salted soya bean paste. Heat oil, then fry garlic and chillies until garlic starts to turn brown. Add salted soya beans and stir fry for 1 minute, then stir in tofu and fry, stirring. Add water and soy sauce and cook untill liquid dries up. Taste and add salt if necessary. Remove from heat, mix in celery and spring onions and serve with rice. |
