Ingredients
2 tofu sheets
1 egg
1 shallot

8 oz pork
8 oz small shrimp (shelled)
1 oz dry black mushrooms
2 oz bamboo shoots Seasonings
1 teaspoon salt
1 teaspoon sugar
1 teaspoon soy sauce
1/2 teaspoon sesame oil white pepper to taste
Method
Wash shrimp with salt water, dry well with paper towel. Deep fry in warm oil (in a hot pan) then set aside. Season and deep fry the shredded pork, set aside. Shred black mushrooms and blanch shredded bamboo shoots. Fry shallot in hot pan and add in the above ingredients. Season well, thicken the sauce, add oil and dish. Deep fry tofu sheets then soak in water until sodt.. Divide into triangular shapes. Wrap in the shredded ingredients, seal with egg white, Fry in pan until brown.
