| Chop Suey Tofu Chowder |

Ingredients 2 pieces Pureland tofu (diced) 1 oz shrimps (shelled) 1 oz green peas 1oz carrots (diced) 1 egg (beaten) 1 oz fresh straw mushrooms (diced) 1 chicken liver (diced) 1 oz bamboo shoots (diced) 1 oz white leek (diced) Seasonings small piece ginger (mashed) 1 teaspoon salt 1/2 teaspoon sugar 1 tablespoon dry sherry 1 tablespoon corn flour 3 cups water 1 chicken cube sesame oil and white pepper to taste Method Dice the above ingredients. Marinade chicken liver in sherry and mashed ginger. Blanch (in boiling water) shrimps, chicken liver, fresh straw mushrooms, carrots, bamboo shoots and green peas. Put oil in hot pan, pour in dry sherry and water, bring to boil. Then put in tofu, mushrooms, etc, again bring to boil. Add in cornflour and water mixture to thicken. stir in beaten egg and white leek before serving. |
