Tofu with Fish Paste PDF Print E-mail
Ingredients
6 pieces of Pureland soft tofu
4 oz shelled shrimp
4 oz dace (or any fish fillet)
2 tbsp chopped spring onion
1 tbsp chopped ginger
1 egg white Seasonings
1 tsp salt 1 tsp sugar
1/4 tso M.S.G.
1/4 tsp pepper
1/2 tsp sesame oil
2 tsp cornstarch

Method
Wash and mash tofu. Devein and wash shrimp, smash into paste. Wash and dry fish fillet. Slice and mince with knife. Mix shrimp and fish paste in a bowl. Add seasonings and egg white. Pound until firm. Add in chopped spring onion and ginger and mix thoroughly. Blend fish and shrimp paste in to the mashed tofu. Add one teaspoon cornstarch, stir until well mixed. Fill greased plate with mixture. Smooth the surface and garnish with a few shrimps. Put in steamer to steam for 12 minutes. Sprinke parsley, oil and light soy sauce on top and serve.
