| Fried Tofu with Chive Dipping sauce |

Ingredients 450gms Pureland Firm Tofu 16 fl oz groundnut (peanut) oil for deep frying Chive Dipping Sauce 1 1/2 teaspoons finely chopped garlic 2 tablespoons coarsely chopped Chinesse green of yellow chives or whole spring onions 1 scant teaspoon salt 4 tablespoons Rich Chicken Stock 1/4 teaspoon cornflour mixed with 1/2 teaspoon water Method Drain the tofu and cut into 4 equal slices. Cut each slice diagonally into halves to form triangles. Blot dry with paper towels. Heat a wok or large deep pan and add the oil. When the oil is hot, gently deep fry the triangles for 3 minutes on each side or until they are golden and crisp. Remove them with a slotted spoon and drain on paper towels. Drain off all but 1 dessertspoon of oil from the wok and reheat. When it is hot, add the garlic and stir fry for 10 seconds. Then add the chives, salt and chicken stock and simmer for 1 minute. Stir in the cornflour mixture and, when the sauce has slightly thickened, serve on the side with Tofu triangles |
